I'm not sure how to say the name but it tasted good. I'm not sure if it was a quesadilla really as I have never made or eaten one before but it was a good improvisation. I fried pepper and courgette. I then put salsa on the bottom wrap then the veg then the cheese and added a bit of garlic powder. I suddenly thought of grilling the wraps first to make it sturdier but only remembered this in time to do the top one. I baked the quesadilla in the oven gas mark 4 for about 5 minutes until it looked crispy. Very tasty. Fairly easy comfort food. To improve it I would have grilled both wraps as it was hard to eat with a floppy bottom!
...and the cheese was good.
University has been an exciting time to learn to support myself and continue my vegan diet, whilst living with non-vegans. I want to share my experiences.

Mexican suprise
I'm hungry. I have just moved back home for a while and I have all my defrosted food to eat up. Last night we cooked a whole bag of peas that had defrosted on the way home and a whole bag of broccoli. I also have a lot of bread.
For ages I have been trying to find a vegan cheese I like. As a life long vegan cheese has not been of much interest to me but in the last few years as I have become more adventurous i've become curious. I have tried many different types. At the Brighton vegan fayre I tried a few of the tasters but they made me feel really sick. However, I have persevered and found that I like melty Gouda and melty mozarrella but now need to find recipes to enjoy these!
My boyfriends flatmates very kindly made me fajitas and after a long day at uni and travelling home I fell in love with them (the fajitas but also slightly the flatmates).
So I am now going to experiement with left over wraps, vegan cheese and salsa. Inspired by quesadillas. Lets see what happens....
